Ingredients for Methi Balls:


Besan 6 tbs
Methi leaves 1 handful (you can use dry fenugreek leaves)
Green chilies 1 or 2 chopped
Ginger Garlic 1 tbs chopped
Hing pinch
Turmeric 1 pinch
Red chili powder pinch
Salt as per taste
Ajwain 1/4 ts
Jeera 1/4 ts
Dhania powder 1/2 ts
Jeera powder 1/2 ts
Meetha soda 1 pinch
Water accordingly to make balls
Oil for frying preferably mustard


For kadhi:

Curd 4 cups
Water 2 cups
Besan 2 tbs
Garam masala 1 tbs
Jeera 1 ts
Hing 1/2 ts
Methi daana 1/2 ts
Desi ghee 2 tbs
Curry patta 7, 8
Turmeric 1 ts
Red chili powder 1/2 ts
Salt as per taste
Dhania powder 1 ts
Jeera powder 1 ts
Coriander leaves


Steps to make kadhi:

1: To make Methi balls mix all ingredients shown above  for balls by adding water slowly as besan soaks less water.
2: Make balls and fry them in oil.
3: In another pot mix curd,water,salt, turmeric, red chili powder, Dhania and Jeera powder well.
4: Take a pan and add ghee. Let it heat. Add hing, mustard seeds and let it splutter. Add Jeera, Kadhi leaves. Now add besan and let it roast till turned aromatic .
5: Now add curd mix in a pan and let it boil by stirring continuously. Simmer the flame and let the kadhi thicken with some boils.
6: Add methi balls and cover for 5 minutes. Add ginger, garlic and give some boils. (Adding ginger, garlic at this stage will enhance the taste). Methi Kadhi is ready to serve with plain rice or roti. Don't forget to garnish it with coriander leaves.
