Kunni Chicken Biryani Recipe- Best Home Made Biryani

Chicken Biryani is one of the most popular dishes in India. The taste and flavors of chicken biryani or some may call chicken pulao make people love it. So today here we are presenting you the best home made chicken biryani recipe. 

Ingredients for marination:

1 kg chicken
Half cup curd
Ginger Garlic paste 2 spoon
Kashmiri red chili powder half tsp
Salt half tsp
Garam masala 1 tbs
Mustard oil 2 tbs

Ingredients for rice :

Soak 3 cups Basmati rice for half an hour before

Ingredients for basic chicken cooking:

Onions sliced 1 no
Garlic chopped 8 to 10 cloves
Shah cumin seeds 1 ts{you can use regular cumin too}
Crushed khade masale{pepper corns 8 no, moti elachi 1 no, long 4 , 5 no Green elachi 2 no, dal chinni 1 stick i.e. green cardamom and cinnamon stick}
Tej patta 3, 4 no
Red chili powder 1 ts
Turmeric Ingredients for marination.
1 kg chicken
Half cup curd
Ginger Garlic paste 2 spoon
Kashmiri red chili powder half tsp
Salt half tsp
Garam masala 1 tbs
Mustard oil 2 tbs

Steps for preparation:

1. Marinate chicken with all the ingredients shown above for marination process for at least 2 hours{an overnight marination would be preferable}.

2. Heat Kunni over gas and add mustard oil and let it come to smoke point. Once raw smell of oil is gone add tej patta, crushed khade masale. Let them fragment. Add garlic, chilies. Add sliced onions and let them sweat. Now add marinated chicken n cook for some time so that it can change its color and absorb all flavors.
Warning: Do not turn chicken frequently otherwise it will break out from bones and that will not taste good.

3. Now add all  dry powder masale and green chilies. Also add ghee at this point. It will give rich flavors. Now time to add soaked rice. Let them roast along with all flavors for 1 minute. Add water (Hot water, it will fasten the cooking process and you will be relieved from the fear of broken rice).

4.Let the water boil on full flame{remember you can use low, high flame as per required}. Now simmer the gas stove and cover the mud pot.

After 10 minutes open the pot and stir rice and add fenugreek and coriander leaves and again cover for next 5 minutes. Now turn off the flame and stir again and cover the pot. After another 5 minutes Kunni chicken pulao is ready.
