Malai Soya Champ| Malai Champ at Home| Cook Home Made Champ
Champs are all time favorite dish for vegetarians. Every one dream it to eat it every day. Its creamy rich taste is made heavenly.
Ingredients
Soya champ 1/2 kg
Ginger 1 inch
Garlic 10 cloves
Black pepper corns 8, 10 nos
Green cardamom 2 no
Dry Kashmiri lal mirch 4-5 no
Cashews 8-10
Almonds 8-10
Laung 4
Cumin powder 1 tbs
Coriander powder 2 tbs
Magaz one hand span
Thick curd 1 cup
Fresh cream 1 cup reserve some to add at last stage
Lemon juice 2 tbs
Water 4 glasses
Oil for frying
Onions diced
Capsicum diced
Salt as per taste
Butter 2 tbs
Mayonnaise 1/2 cup
Burnt Charcoal
Chat masala 1 ts
Method
For Marination
1: Soak almonds,cashews, Magaz and red chilies in hot water for an hour.
2: Boil water and add salt, champs. Boil for 5 minutes if they are frozen. If normal then boil for 2,3 minutes(Excess boiling can make champs hard as it contains protein).
3: Cool down champs after draining hot water and cut champs in small pieces whether horizontal or vertical.
4: Heat oil in a pan and fry champs till golden in colour.
5: In a mixer add ginger, garlic, chilies, pepper corns ,long, soaked almonds, cashews, Magaz, cardamom and make fine paste.
6: In a bowl add curd, cream, paste of almonds etc and salt.Now add fried champs ,coriander and cumin powder,lemon juice and mix everything well and let them be marinated for 2,3 hours.At this time add burnt charcoal and cover the bowl air tight to give smoking flavors.
For preparation
1: In a nonstick pan add butter. Saute onions and capsicums for 2 minutes.Add marinated champs and cook for few more minutes so that its moisture gets evaporated.(Do not add the whole material. Just pick champs and saute them in pan. Leftover material will be added later on)
2: Now add leftover marinated material and cook for 2 or 3 minutes.Now add mayonnaise and some cream for thick rich texture and taste.Stir all material well for 2 to 3 minutes and its ready .{Don't over cook after adding cream otherwise it separates its oil.}
3: Sprinkle some chat masala over it and its ready to serve.
