Chicken Kabab Kathi Rolls
Kathi rolls are one of the quickest and easy street foods to be eaten while walking through roads. It is very much popular street food of Kolkata. Crisp from outside and soft inside with sharpness of chilly paste and tangy green chutney takes this dish to some other level of tastes.The genius of chicken stuffed inside makes the day special.
Ingredients for Chicken Tikka
Chicken 300 gm
Ginger garlic paste 2 tbs
Red chili powder 1 ts
Curd 3 tbs
Turmeric a pinch
Lemon juice 2 tbs
Coriander powder 2 ts
Cumin powder 1 ts
Red chilly paste ( 8-10 chilies,7-8 garlic cloves,cumin 1/2 ts, salt a pinch make paste with hot water)
Salt as per taste
Ingredients for roll
Maida 2 cup
Salt 1 /2 ts
Vanaspati ghee warm 2 tbs
Warm Water to make soft dough
Knead maida by adding salt and ghee and rest it for 1/2 hour
Eggs 2
Green chutney
Sliced onions
Oil for fring
Chat masala 1 tbs
Method
1: Marinate chicken by mixing all above ingredients given for marination for 3 hours.
2: After 3 hours saute chicken in a pan with some oil. If you have barbecue system then you can roast them in that way by applying oil or butter. If making in pan then give it a charcoal dum by putting desi ghee on burnt charcoal for smoky flavor.
3: Now make rotis of maida dough and keep them aside.
4: Take pan and pour 1 tbs oil and place roti on it.Now pour beaten egg on upper side of roti and let it cook by turning it .
5: Now arrange chicken pieces on one end of roti{ Egg side up}.Pour green chutney and sliced onions on chicken pieces.Sprinkle chat masala on it. Now roll roti by pushing chicken back to make perfect kathi roll .
6: Wrap it by half end with tissue and serve it.
