Pan Fried Noodles With Veggies In Homemade Schezwan Sauce
China has given many foods which are relished by all over the world. One of them are noodles that too are in so many varieties. If you are bored of eating the regular noodles, you are at the right place. Today we are going to make pan fried noodles, restaurant style.
Fan Fried Noodles are different from the regular noodles. So give them a try by making them at your home today.
Ingredients
4 cup boiled noodles
1/2 cup french beans cut into length
1/2 cup sliced mushrooms
1/2 cup diced carrots
1/2 cup diced capsicums red, green, yellow
1/4 cup diced cabbage
1/2 cup broccoli
(You can use any vegetable and also you can add boneless chicken if you want)
3 tbs chopped garlic
2 nos dry red chillies
1 tbs Schezwan sauce
4 tbs oil
1 tbs cornflour and 1 cup water to make slurry
1/4 ts black pepper powder
1 ts vinegar
1/2 cup fresh coriander chopped
Salt as per taste
1/2 cup water
Method
• In a pan add 1 tbs of oil and spread a thick layer of boiled noodles in it. Set noodles by pressing them so that they may form a pan cake like shape. Let them crisp on a slow flame for 7 to 8 minutes.
• After one side gets crispy, turn the side by placing a plate on the pan and demould the noodles on the plate and flip them and again place them in a pan to be crisp from other side. Add 1 tbs of oil again and let them crisp on a low flame.
• In another pan heat 2 tbs of oil and add garlic. When garlic turns a little brown, add hard vegetables first and soft ones later (except cabbage).
• When they get half cooked add Sezhwan sauce, salt, pepper and cabbage (You can make it without schezwan sauce by replacing it with tomato ketchup)
• Now add water and boil it. Then add cornflour slurry to it and mix until it gets boil, otherwise lumps will form in it.
• On the other pan, noodles are ready. Give them some more minutes if they are less crispy.
• Now place pan fried noodles in a plate and pour vegetables on noodles with gravy and garnish them with coriander.
