Tomato (Cottage) Cheese (Tamatar Paneer).
Ingredients
200 grams Cottage Cheese (cut it into big chunks)
2 onions medium sized
6 - 7 tomatoes medium sized
6 -8 cloves of garlic
1 inch long ginger (make paste of ginger and garlic)
1/2 ts turmeric powder
1 ts red chilly powder
1 tbs coriander powder
1 ts garam masala
1/2 ts cumin seeds
2 pinch of hing
2 pinch of sugar
3 tbs mustard oil
1 tbs Kasuri methi
1 tbs coriander leaves
Salt as per taste
Method
• Shallow fry your cheese in a non stick pan. If you want to deep fry cheese you can.
• In a heavy bottom pan heat mustard oil and add hing and cumin seeds. When they splutter add the paste of onions and tomatoes together. Cover them and let them cook for some time on low flame ( onions and tomatoes shredded with shredder tastes better then mixer or chopper).
• Now add all powdered masalas and cook till it gets soft and separates from the oil. Now add half a cup of water and again cook till the oil separates. This will make tomatoes more soft.
• Now add salt, sugar, cheese and the paste of ginger, garlic and cook for more minutes. After this add a little water again and give it 2 to 3 boils. Add Kasuri methi.
• Adjust the seasoning and garnish with coriander leaves.
You can enjoy Tamatar Paneer with chapati or rice.
